Tetsuhiro Yanagiba Knife
Traditional Japanese stainless steel yanagi-ba, with a poplar wood handle and resin collar. Yanagi ba bōchō translates as 'willow blade knife'. It's designed for preparing sashimi and nigiri – the extended length allows it to slice cleanly through fish without interruption. The thin blade allows for a smooth cross section without tearing or bruising, preserving the flavour of the fish.
